I have to say, I was really suprised that people actually read my blog! That makes me happy! SO... as asked for... here is the recipe and pictures for the cheesecake. The recipe is from the Lion House Desserts cookbook! (Thanks for lending it to me Mom!)
Preheat oven to 350








1 1/2 cups graham cracker crumbs, rolled fine
3 tablespoons butter or margarine, melted
3 8-ounce packages cream cheese, softened
1 cup sugar
3 eggs
3/4 teaspoon vanilla
1/3 cup lemon juice
1 pint sour cream
3 tablespoons sugar
1/2 teaspoon vanilla
1. mix together graham cracker crumbs and butter or margarine.
2. Press firmly into bottom and sides of a 9 or 10 inch springform pan.
3. In a large mixer whip cream cheese, gradually add sugar; then add eggs one at a time. Stir in vanilla. Stir in lemon juice.
4. Pour filling into crust.
5. Bake 40 minutes
6. Whip sour cream, add sugar and vanilla. Spread on top of cheesecake and bake for 10 more minutes.
7. Cool before removing sides from springform pan.
8. The recipe calls to garnish with lemon zest... BUT... I like cherries!
Refrigerate until ready to serve!
9. Enjoy your creation!!!
*I added another tablespoon of butter to my crust. Next time I will add more graham crackers and butter. I really like the crust!
* I will also cook it a little longer next time. It was a little soft in the middle for me. Being my first cheesecake, I didn't know!
