Egg Roll Adventure

 I have been craving egg rolls like nobody's business as of recent. About a month ago I saw a recipe on a cooking blog that I follow for egg rolls... it's been all down hill since then!
The blog I am talking about is Cheeky Kitchen found at http://www.cheekykitchen.com/ . I really like this blog because not only does she had GREAT RECIPES, but she has wonderful pictures and is absolutely hilarious!
So... moving on to the EGG ROLLS...
Here is the recipe and directions...
1lb. ground chicken
2T olive oil
3C shredded cabbage
1C grated carrots
1/2 yellow onion, diced
5-6 bunches fresh scallions, chopped
2T soy sauce
1 pkg. egg roll wrappers
1 1/2C canola oil for frying

Step 1: In a large skillet, heat oil. Add chicken and cook. Toss in cabbage, carrots, and onions and cook on medium-high until softened, about 5-6 minutes.  Toss in scallions, soy sauce, mix well and remove from heat.  Should look something like this... set aside.
 STEP 2:  Place 2-3 tablespoons of the mixture on the center of an egg roll wrapper. 
 To roll up, bring the two tips of the diagonal toward the center... 
  then roll tightly like a burrito. Place a dab of water with your finger at the top point and finish rolling.

 This recipe will make about 20 egg rolls! mmmmm...
 STEP 3: Heat a 1/2inch-1 inch of oil in a large skillet on medium. Use tongs to place egg rolls into hot oil.
  Flip after about a minute until each side is lightly browned... place on a plate lined with paper towels to absorb any extra oil.
Enjoy with your favorite sauce!!!
